Combi-steam ovens are one of the most powerful Gaggenau cooking appliances. Unlock the Combi-steam oven’s full potential by utilizing the baking tips below.

Yeast dough can be proved within a temperature range of 85 - 125° covering the dough is not necessary. Formed bread or rolls can be left in the oven after the second rise when the oven temperature is increased for baking as the target temperature will be quickly achieved.

Baking options

Convection + 60% humidity is ideal for puff pastry and for baking yeast dough.

Convection + 30% humidity, is ideal for ensuring a perfect crumb as the oven seals trapping moisture emitted from the baked item.

Convection + 0% humidity is ideal for items with excess humidity, perfect for fruit muffins, quiche and general baking.

Injecting bursts of steam

Misting is possible in the 0% and 30% modes, + the baking temperature by touching the misting symbol. Misting should be engaged at the beginning of baking to achieve a crisp glossy crust.
